This essay proposes a journey through the diversity of the food heritage of mainland Portugal, presented in connection with the sea, land and nature, as an Atlantic-Mediterranean heritage, in daily life or on occasions of conviviality and celebration, with soup or broth, seasonings and bread always to hand. An attempt is made to outline a traditional heritage whose contribution could be decisive to the promotion of the economy and the sustainable development of the regions."
